Macelleria Pino personally follows the farm charged of the feeding and entrusts the exams on the meat to authorized laboratories. The results of the exams show the high level of the monounsaturated fats – which often overpass even the saturated fats – and an extremely low tax of cholesterol. The cholesterol values fluctuate from 28 to 41 mg/100g while the national average varies from the 49 to 75mg/100g and it is even lower then the wild bass whose average is about 48mg/100g.
